Vegan Holiday Dish: Quinoa Stuffed Acorn Squash


I believe we could call it “Herbed Quinoa
Stuffed Acorn Squash.” It’s a mouthful though, so I just go with “Quinoa Stuffed Acorn
Squash.” The Thanksgiving table is often centered around the turkey, but this stuffed acorn
dish really challenges that tradition. It makes a great vegan main dish because,
one, it offers this complete protein and it also has healthy fats and additional
fiber. I personally really love this recipe because it’s very adaptable. So, if you aren’t a fan of pepitas, go ahead and switch those out for pistachios. If you
want to make it a little bit more sweeter you can brush the acorn squash
with some maple syrup before roasting. Or, if you’re not a fan of quinoa, go ahead
and use wild rice instead. Any way you make it, it’s a very easy and versatile
vegan main dish. So instead of turkey go for this stuffed acorn squash.
